Your are right that it is possible to do real-life investigations (and it has been done). However, it is more difficult to control for what is happening. Your example with new plane flights tests. Still, only one in thousand may crash. That is quite some time and money you have to spend. And then you might still have only one crash; and you would want to have 10 or 20 to be able to claim some paranormal effect of seeing the future. You are absolutely right that it can be done but the effort is huge and outcome uncertain. Therefore people aim at laboratory tasks which can easy be replicated.
