Substitutes?
I've heard of sugar substitutes and to a certain extent, potassium can be used as a salt substitute, but what exactly is a "fat substitute"? Modified fats are still fats aren't they? I'm missing something here and would appreciate some input.

What is a modified fat?
Fat substitutes are usually chemically modified carbohydrates or proteins that fool the tongue into believing that there is fat present in the food. They still contain calories but fewer overall.
